Dukan Meatza Margherita (Cruise phase)


This low carb, no dough recipe is so simple and tasty! Plus, you'll be on cloud nine, because you can have as many slices of  this ground meat crust pizza as you want, because it's Dukan friendly. I'm making mine a Margherita Meatza: with tomatoes and fat free cheese. Classic Margherita calls for fresh basil, but I had run out of fresh basil! I used choped chives instead an it turned out just great.

Ingredients, for a 28 cm / 11 inch Meatza

For the crust

  • 400 grams / 1 lb of lean minced meat: beef, chicken or a mix of chicken and turkey.
  • 1 egg, small, lightly beaten (or just 1 regular egg white if you're watching your cholesterol levels)
  • 1 clove garlic, minced
  • 2 tablespoon chopped fresh parsley
  • 2 tablespoon oat bran
  • 1 tablespoon wheat bran
  • a pinch of spices, use the one you like best
I am also using
  • 400 grams / 14 oz of tinned diced tomatoes
  • a pinch of salt
  • pepper and a pinch of spices (i.e. dried oregano)
  • 300 grams / 10 oz of fat free mozzarella or homemade fat free yogurt cheese.
  • fresh basil (or chopped chives)



Directions

  1. Heat your oven to 200 C / 400 F
  2. In a medium size bowl combine the minced meat, garlic, parsley, beaten egg (or egg white), the oat bran and the wheat bran. You can add some spices too. Mix using your hands, but don't overwork it, because it's easier to get the meat into a crust shape if you just mix it lightly.
  3. Take your oven tray and cover it with a silicone sheet or parchment paper. You can also use a 11 inc pizza mold or a pizza stone (if you are lucky enough to have one, that's it)
  4. Shape your crust: start by giving the meat the shape of a hamburger and then use your hands or the back of a spoon to press the center of the meat crust down and make the edges a little thicker.
  5. Be gentle and keep shaping until you get a nice shape and soft, round edges. All this work will be worth it: once you're done, your Meatza is going to be as pretty as a "regular"pizza, I promise it.
  6. Now, let's get our tomato sauce ready. Place a fine mesh strainer over a medium size bowl and pour the tinned dice tomatoes on the strainer. We want to drain as much liquid out as possible, so stirr the tomatoes with a spoon or with your hands until all the liquid is gone (all the liquid should be in the bottom of the bowl right now, save it for another recipe)
  7. Add a pinch of sea salt or kosher salt, some pepper and spices (oregano, for example)
  8. Spread the tomato sauce over the Meatza crust and arrange the fat free mozzarella (or fat free homemade yogur cheese) on top. Put the Meatza in the oven for 20-25 minutes, at 200 C / 400 F. The meat should be cooked through and lightly set. Your Meatza will even have a crusty edge!
  9. Add fresh basil and serve. You can cut it into slices, like a regular pizza. Enjoy!
