Coffee Mousse (Attack phase)


Coffee Mousse, Dukan diet

Ingredients
  • 1 sachet unflavoured powdered gelatine (Knox)
  • 8 oz fat free greek yogurt (250 grams)
  • 8 oz fat free cream cheese (250 grams)
  • 1 tablespoon instant coffee
  • 4 egg whites
  • a pinch of salt
  • sweetener to taste

Yogurt and cream cheese mustn't be cold: take them out of the fridge at least 10-15 minutes before cooking this recipe



Directions
  1. In a small bowl sprinkle the gelatine over 3 tablespoons of cold water. Leave to soak for 5 minutes. Add 1/4 cup of boiling water and stir until gelatine has completely dissolved. Let cool down slightly.
  2. In a medium bowl combine yogurt, cream cheese and instant coffee until smooth. Add sweetener to taste.
  3. Take a tablespoon of the yogurt and cheese and mix it with the gelatine. Stir and add another tablespoon. Do this a couple of times before adding the rest of the yogurt and cheese mixture, to avoid gelatine lumps.
  4. In a clean, dry bowl and using clean beaters, whisk the egg whites with a small pinch of salt until they form stiff peaks
  5. Using a large, metal spoon, fold the egg whites into the cream (it's easier if you take 1/3 of the egg whites at a time, folding carefully before adding the next third)
  6. Divide the mixture equally between some dessert glasses, ramequins, expresso cups... Refrigerate for at least 4 to 5 hours before serving.

Some Tips
Change the flavour
- using cocoa powder instead of instant coffe 

- adding food flavourings or 

- using sugar free jello instead of unflavoured gelatine.
Spicy Pumpking Latte Mousse 

8 oz canned pumpkin puree + 8 oz of fat free cream cheese + vanilla extract, instant coffe and pumpkin pie spices (same amount of gelatine and egg whites)

Just in case...
"Folding is a method used to incorporate more air into the mixtures. In order to fold, you need a spatula or a spoon. Carefully pour mixture A into mixture B a little at a time. Take the spatula, scrape the bottom of the bowl, and take mixture B and "fold" it over the other mixture. Do not simply stir, as that would dispel the air. Continue to scrape the bottom of the bowl and flop the mixture A over mixture B until well combined!"
